Subj:  Pumpkin Bread

Here's a variation --Pumpkin Cranberry Bread
Can be made low fat.. my husband can't wait for the holidays for this one..I get great
reviews with this one.....

2 cups pumpkin
2 cups white flour
2 cups whole wheat flour
2 cups sugar
3 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
3 eggs (Or 6 egg whites for low fat version)
1/2 cup orange juice
1 bag of whole fresh cranberries

Mix dry ingredients.  Add pumpkin and eggs (or egg whites) and mix well.  Batter will
be dry, so add up to 1/2 cup orange juice to get a stiff moist batter. Stir in the whole
cranberries.

Spray two large loaf pans with PAM or other spray shortening. Divide the batter
between the two pans. Bake for one hour in a preheated 350 degree oven.

Enjoy... great toasted too!
