Subj: Chocolate Sin Torte
1 c. sugar
10 oz semi-swet chocolate - in pieces
1/2 c. lightly salted butter
6 eggs - separated @ room temp
1/2 tsp. vanilla
2 tsp kaluha, dark rum, OR creme de cacao
Preheat oven to 375. butter and flour an 8in. SPRINGFORM pan.
Melt chocolate and butter slowly - I micro on med for 1 min. intervals, stirring each
time. - Set aside in a warm place or on a double boiler to keep melted.
In large bowl, beat yolks til pale - then add 3/4 c. sugar, and beat until smooth and pale
yellow (about 4 mins.) Add in chocolate mixture and mix. Add vanilla and your choice
of liqour. Blend some more - set aside.
In medium bowl, whip whites until soft peak form. Add remaining 1/4 cup of sugar
and whip until firm but not dry peaks form. GENTLY but completely fold into yolk
Pour into prepared pan and bake @375 on the second shelf up for 15 minutes. REDUCE
heat to 350 and bake 15 minutes longer. REDUCE heat to 250 and bake 30 minutes
longer. ( 1 hour total cooking time) Turn oven off and prop door open. Leave cake in
oven for 30 minutes. Remove from oven and top with a damn paper towel for 5
minutes. Remove towel and let cool completely. Dome WILL crack - this is normal!
Press top down to smooth over.
when cool - there are two variations - the one I use is to top with a chocolate mouse or
silk which you can buy the instant mix in the store, or the recipe suggests: Whip 1 1/2
cups of whipping cream until peaks form then and 1 1/2 tablespoons powdered suar -
whip till stiff peaks - top and dust with powdered sugar.
This is a MEGA rich MEGA chocolate dessert and it's made completely WITHOUT
FLOUR!! This is a great recipe if you know someone who is allergic to flour - and I do!!
