Banana Poppy Seed Muffins

3 ripe bananas
3/4 cup sugar
1/4 cup vegetable oil
2 teaspoons grated orange peel
2 cups all-purpose flour
1l/2 tablespoons poppy seeds
2 teaspoons baking powder
1/2 teaspoon salt
Citrus Glaze (recipe follows) Preheat oven to 375oF. Grease 12 (2l/2-inch) muffin cups.
Puree bananas in blender (1 cup). Mix pureed bananas, egg, sugar, oil and orange peel in
medium bowl until well blended. Combine flour, poppy seeds, baking powder and salt
in large bowl. Stir banana mixture into flour mixture until just moistened. Spoon
evenly into prepared muffin cups.
Bake 20 minutes or until wooden pick inserted in center comes out clean. Remove
from pan; cool on wire rack. Top with Citrus Glaze while warm.
Makes 12 muffins
Citrus Glaze: Combine
11/4 cups powdered sugar,
1/4 cup orange juice,
1 teaspoon grated orange peel and
1 teaspoon vanilla extract in medium
bowl until smooth.
