Subj:  Jalapeno Cheese Corn Muffins

I cheat and use the Jiffy Corn Muffin mix, but then add:

1-1/2 - 2 cups shredded cheddar
1/4 - 1/2 cup diced sweet onion
2 jalapenos, diced fine

and then bake according to box directions.
