Ham and Hashbrown Breakfast Bake 

Ingredients:
Nonstick cooking spray 
6 slices lean ham 
1 bunch scallions, diced 
8 eggs 
1 c. cottage cheese 
1/4 c. frozen hash brown potatoes 
1/4 c. Cheddar, Swiss, or Monterey Jack cheese 

Instructions:
Spray an 8 or 9 inch baking pan with nonstick cooking spray. Put
strips of ham on bottom of pan. Combine eggs, cheeses,  scallions and 
potatoes and spread mixture over ham. Bake at 350F for 45 to 50 
minutes. If it's not set in the center, zap in the microwave at 30%
power for 1 or 2 minutes. Serve with salsa, mushrooms, and 
peppers.
