                        PEANUT BUTTER & OATMEAL COOKIES

1 c. all-purpose flour
1/2 tsp. baking soda
1/2 c. margarine
1 c. peanut butter
1/3 c. sugar
1/3 c. packed brown sugar
2 egg whites
1/2 tsp. vanilla
1 c. rolled oats.

Mix flour and baking soda together. Using electric mixer on medium to high
speed, beat margarine for 30 seconds or until softened. Add peanut butter,
sugar and brown sugar. Beat until combined, scraping sides of bowl
occasionally. Add egg whites and vanilla, beating until well combined. Add
flour mixture and beat on low until mixed well. Stir in oats. Drop rounded
teaspoonfuls 2-inches apart on an ungreased cookie sheet. Bake at 375
degrees for 8 to 10 minutes or until edges are golden. Makes about 36.

Fat, 0 mg. Cholesterol, 51 mg. Sodium and 47 mg. Potassium.
