Subj: Crispy Potato Chicken
For anyone wanting a quick, easy, yet different recipe, I made this the other night:
Crispy Potato Chicken
1 med potato (not peeled),
2TB dijon mustard,
1/2 tsp chopped garlic,
1 lb. chicken,
oil (canola or olive oil) 1 tsp pepper
arrange chicken in a 9X9 baking dish sprayed with non-stick coating, mix mustard &
garlic, spread over chicken. Scub potato, grate and mix w/oil. Spread over chicken.
Sprinkle pepper. Bake 25-35 min. until potatoes are golden.
