Subj:  Betty's Salmon Steaks

A truly tasty way to cook Salmon, and its FAST!

1/2 cube butter
1 medium onion, chopped                
4 salmon steaks (or filets)
2 shakes Tabasco sauce
4 Tablespoons soy sauce

Melt butter in frying pan (375o) over moderately hot burner.  Add the onion and saute
lightly.  Add 2 Tablespoons soy sauce, and Tabasco sauce and stir.  Place salmon steaks
on top, drizzle the remaining 2 Tablespoons soy sauce over salmon, cover and let
simmer until done. (slightly pink in center) about 12 mins max...probably less
depending on thickness of salmon.  TO OVERCOOK SALMON IS A CRIME.  Garnish
with dill.

You can serve this with steamed rice and the REFRESHING CUCUMBER SAUCE below.

You will need:

3 cucumbers peeled
2 teaspoons salt (perhaps a little less salt)
1 cup sour cream
1 tablespoon fresh dill

Peel and split cucumbers and remove seeds.  Finely chop; sprinkle with salt; set aside for
at least 2 hours in refrigerator.  Drain well and mix with sour cream and dill.

Glop the mixture over the Salmon steaks or beside it.
