Subj:  Carspan's Salmon and Pasta
From:  EBWATERS

1/2 - 3/4  lb flaked smoked salmon (hard smoked)
2 - 3 roma tomatoes chopped
1/2 red pepper cut in fine strips
1 shallot chopped fine
3 -4 garlic cloves chopped
3-4 stalks green onion sliced fine (green only)
fresh basil sliced fine (to taste, optional)
splash of brandy
half n half
olive oil extra virgin
little butter to bind
fresh cracked pepper
nutmeg( to taste, optional)

saute galic, shallot few seconds in oil.  add tomatoes cook about 5 minutes, add red
pepper, onion, salmon saute another 2 minutes till salmon heated through then add
half n half and spices and basil heat through and serve hot over pasta (penne, shells,
linguine, etc)
