Here is a nice little rice recipe.  Most of our friends and family like it very much. 
The kids really love it.

1 cup uncooked, regular rice
1 small onion, chopped
1 tbsp. chopped beef marrow
3 tbsp. butter
2 cups chicken broth
1/4 tsp. salt
dash ground saffron
1/4 c. grated parmesan cheese
1/8 c. julienned ham
1/8 c. peas

Cook and stir rice, onion and beef marrow in butter in 2-qt. saucepan until rice is golden,
4-5 minutes.  Stir in remaining ingredients except cheese.  Heat to boiling, stirring once
or twice; reduce heat.  Cover and simmer 14 minutes.  (Do not lift cover or stir)  Stir in
cheese lightly with fork;  cover and let steam 5 minutes.  Serve rice with additional
Parmesan cheese if desired.
Serves 6.
