Subj:  Lentil Nut Burger

2 1/2 cups water drawn from the well
1/4 cup brown rice
3/4 cup lentil
1 large sweet onion
4 tablespoon fresh chopped thyme
1/2 cup chopped black olive
1 cup chopped mushrooms
1cup finely chopped almonds
Add rice to water, simmer gently for 5 minutes, then 
add lentils.  Cook approx, 25
minutes until water is evaporated. Lentils should be 
slightly overcooked, AKA ruptured
and mushy.  In a serperate pan saute chopped onion, 
mushrooms, and thyme in 4
tablespoons buuter, or your favorite oil.  Mix into 
cooked rice and lentils.  Add almonds
and olives and mix for homogenaity(sp?).  Form into 
patties.  Fry in a lightly oiled
nonstick pan.  Garnish with parsley, top according to 
taste. 
This is a variation from "The Enchanted Broccoli 
Forest" by Mollie Katzen.
P.S.  This is also a complete protein and Jeff my roommate 
has lived on this exclusively
for up to a month.
