l/2 cups all-purpose flour
1/2 cupWheat Germ
 1/2 cup granulated sugar
 1 tablespoon baking powder
 1 l/4 teaspoons ground cinnamon
 1/2 teaspoon salt (optional)
 1 cup peeled, chopped apple
 1 cup milk
 1/4 cup vegetable oil
 1 egg, slightly beaten
 1/3 cup chopped nuts
 2 tablespoons margarine or butter, melted
 
Heat oven to 400oF. Line 12 (2l/2-inch) muffin cups with paper baking cups or grease
lightly.
In large bowl, combine flour, wheat germ, 1/4 cup of the sugar, the baking powder, 3/4
teaspoon of the cinnamon and the salt. Stir in apple. In small bowl, combine milk, oil
and egg. Add to flour mixture, stirring just until moistened. Fill muffin cups almost
full. In small bowl, combine remaining 1/4 cup sugar, l/2 teaspoon cinnamon, the nuts
and margarine. Sprinkle over muffins.
Bake 20 to 25 minutes or until golden brown and wooden pick inserted in center comes
out clean. Remove from pan.
Makes 12 muffins

Tip: To freeze muffins, wrap securely in foil or place in freezer bag. Seal, label and
freeze. To reheat frozen muffins, unwrap muffins. Microwave at HIGH (100%) about 30
seconds per muffin.
