Subj:  Cottage Cheese Latkes

1 lb cottage cheese, 
2 eggs, 
salt and pepper to taste, 
1/4 cup whole milk, 
1/2 tsp baking powder, 
3 Tbp flour.

Lightly oil pans and get hot.  Cook latke batter like pancakes, and turn when the
underside starts to brown. Make sure to re-oil every second cycle, using an oiled paper
towel to spread thinly and pick up any latke debris.  Feed gnarly ones to the dog.

Serve with light sour cream on the side. Applesauce is optional.  Again, I recommend
making double the recipe to really fill the stomach!
