Eva's Apple Walnut Gratins

8 medium tart apples
3/4 cup coarsely chopped walnuts
1 cup sugar
1 tsp cinnamon
scant l/4 teas mace
1/8 tsp ground cloves
1 tsp lemon zest
1 1/4 Tbsp lemon juice
 8 oz cheddar cheese, shredded at room temp. (2 cups)

Peel, stem and core apples and cut into 1/4 inch slices.  Place in mixing bowl with
walnuts, sugar, cinnamon, mace, cloves, lemon zest and lemon juice and toss to mix.
Spoon  mixture into 8  1 cup  souffle dishes or ramekins.  Place filled dishes on baking
sheet.
Bake at 375 on center shelf 20 -25 minutes or until Apples are tender.  Dot apple mix in
each dish with small pieces of cheese.  Bake 8 - 10 minutes until cheese melts.  Remove
gratins from oven and let cool 5 min.  Serve warm.
Makes 8 servings
