Green Bean Salad  (Ensalada de Ejotes)



   * 3 cups of cut green beans
   * 8 radishes cut into thin slices
   * 1/2 onion finely chopped
   * 3 eggs
   * 3 teaspoons of oil
   * 1 tablespoon of vinegar
   * 1 pinch of sugar
   * 1 pinch of oregano
   * 1 pinch of baking soda
   * salt and pepper


1. Hard boil the eggs. Let cool and peel.

2. Separate the yolks from the whites of the eggs.

3. Cook the cut green beans with salt and a pinch of baking soda. Drain

4. Place the green beans, the radishes and onion in a salad bowl. Mix the
whites of the eggs, oil, vinegar, salt, pepper oregano and sugar. To serve,
pour everything over the green beans and sprinkle the chopped up yolks on
