1 tbsp. butter 
1 tbsp. vegetable oil 
1/8 c. onion, chopped 
2 small garlic cloves, minced 
1 small diced potato (optional) 
8 to 10 small corn tortillas, torn into tiny pieces 
1/4 lb. pork sausage (optional) 
6 to 8 eggs, beaten 
17-ounce can Mexican red picante sauce 
1 to 2 c. favorite cheese grated (Swiss, Monterey Jack, Cheddar,
Salt and pepper to taste 

In a skillet, melt a little butter and oil. Saute onion, garlic,
and potatoes if using. As mixture cooks, stir in tortilla pieces.
Add additional oil as needed to keep from burning. Fry until
tortillas are crisp. Add sausage if using. Stir in eggs, picant;aae
sauce, and salt and pepper. Cook over low heat. Stir in cheese 
when egg is just setting. Cook until cheese has melted, and serve 
immediately. Makes 4 to 6 servings.
