Beef Enchiladas

1 pound ground beef
1 cup cottage cheese
1 4.25 oz. can chopped ripe olives, drained
2 tbsp. minced fresh parsley
1/2 tps. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
8 flour tortillas
1 medium onion, chopped
1/2 medium green pepper, chopped
1/2 medium green pepper, chopped
1 tbsp. cooking oil
1  15 oz. can tomato sauce
1  4 oz. can green chiles, chopped
2 tsp. chili powder
1 tsp. salt
1/2 tsp. garlic powder

1 cup shredded cheddar cheese

In a skillet, brown the ground beef. Drain. combine with cottage cheese, olives, parsley,
garlic powder, salt, and pepper. Place about 1/3 c on each tortilla. Roll up. Place tortillas,
seam side down, in an ungreased 13x9x2 inch pan. For sauce, saute the onion and
pepper in oil until tender. Add tomato sauce, green chiles, chili powder,sugar, and garlic
powder. Pour over tortillas. Cover and bake at 350 degrees for 30 minutes. Sprinkle with
cheese and return to oven for 5 minutes or until cheese melts.
Makes 4 servings.
