BEEF STROGANOFF -   A SLAM-BAM-SAM !  Prep time about 15 mins

Ingredients -

1 1/2 lbs Beef Tenderloin, round steak, stew meat (cooking times vary to
tenderness)
1-2 TBLS Salt-free Butter, if you substitute Margarine you have to use more
and it won't brown as well.
1 1/2 Beef broth..Make your own stock or open a can.
2 TBLS Catsup
Garlic - 1 clove or 1/8 tsp granulated minimum.  I use both sometimes and
more.  We like it.
1/2 pound Mushrooms, sliced.  I use more or less according to availability.
1 onion, small medium.  Chop it fine.
Flour or Corn starch to thicken
1 Cup dairy sour creme (any, lo fat or ?)

Now you can "dress up" this recipe or "dress it down" - for cost.  Stew meat
(cut 1/8 inch slices) takes
longer to get tender and of course Tenderloin is much faster.  I always use
round steak since we like the
flavor. 10 mins to tender or thereabouts.

Cut the meat across the grain in 3 inch X 1/4 inch strips.  If you don't have
a kitchen shears toss the
meat in the freezer for 1/2 to an hour and use a knife.  Cut off all the fat.
 Yuck!

Brown the meat in the butter.  I like to use Wok.  12 inch skillet or ? OK
 FAST FLAME!
I season the meat with granulated garlic.

Broth - set aside 1/3 cup for flour or cornstarch later (to thicken).  Make a
mix adding Catsup, chopped
(if desired) fresh garlic clove(s) and salt 1 tsp if desired.

Add broth mix to meat.  Cover and Simmer until meat is tender.  Stew meat
will take 1 or more hours,
other beef 10 mins or more.

I like to saute (little butter) my chopped onion and sliced mushrooms aside
but you can just add them as
is when meat is tender.  Simmer until onion is tender.  I think mushrooms
need a little salt.

Use the reserved broth to dilute your thickener.  Add to boiling  meat mix
.Attend until thickened.
Reduce heat and stir in Sour Creme.

We like Egg noodles but you can serve poured over anything.  I've used
tortilla chips.

RECAP
Brown meat and season
Add most of the broth with Catsup and fresh garlic.
Cover, Simmer to meat tender.
Add onions & mushrooms, simmer until onion tender
Thicken
Add sour cream, HEAT THRU


BEEF STROGANOFF

     STROGANOFF-1 - Sumptuous beef Stroganoff

     This easy recipe can be served either on steamed rice or  on
     noodles.

INGREDIENTS (Serves 4)
     1 1/2 lbs round steak or other beef fillet
     8 oz      canned sliced mushrooms
     12 oz     sour cream
     4 oz      white wine

     2 Tbsp    chopped onion
     2 Tbsp    Worcestershire sauce
     1 tsp     nutmeg
     1 Tbsp    chopped chives
     1 tsp     minced garlic (or more to taste)
               salt
               pepper
               pasta or steamed rice

PROCEDURE
          (1)  Cut meat  into  1/2-inch  thick  by  2  inch  long
               strips.

          (2)  Saute the onions in butter until brown.

          (3)  Place meat in pan with onions.   Sear  quickly  in
               frying  pan  along  with  onion.   (This seals the
               juices inside.)  Avoid overcooking the meat.


          (4)  Add mushrooms, and stir in the wine,  chives,  and
               garlic for about 5 minutes.

          (5)  Finally add sour cream, Worcestershire sauce,  and
               chives, and simmer until it almost boils.

          (6)  Serve on noodles or steamed white rice.

NOTES
     You may want to vary the thickness of the sauce. I  do  this
     by adding sour cream to thicken, or adding wine to lighten.

RATING     Difficulty: easy.  Time: 30 to 45 minutes  cooking.   Preci-
     sion: approximate measurement OK.
