MEAT LOAF

We made a mixture of ground turkey and extra-lean ground beef even leaner by
stretching it with shredded potato. Fat-free egg whites bind it all, and barbecue sauce
replaces the bacon on top.

 12 ounces 90% lean ground beef
 12 ounces ground turkey
 1 potato, shredded and peeled (1 cup)
 3/4 cup finely chopped bell pepper
 3/4 cup finely chopped onion
 1/3 cup barbecue sauce
 Whites from 2 large eggs
 2 teaspoons minced garlic
 1 1/2 teaspoons salt
 1/2 teaspoon each dried Italian seasoning and pepper

1. Heat oven to 375 F. Have ready a 9x5x3-inch loaf pan.
2. Put all ingredients except 2 tablespoons of the barbecue sauce in a large bowl. Mix until
blended.
3. Pack into pan. Brush with remaining 2 tablespoons barbecue sauce.
4. Bake 1 hour to 1 hour 10 minutes, until no longer pink in middle and meat
thermometer reads 160 F.
