This dish is not a "good looking" dish, but it is very tasty.  My husband likes it a lot, but
wasn't really sure he even wanted to try it the first time around!  I don't know where it
came from originally...I learned it from a friend.  Also, it can be made a day ahead of

Hamburger Potato Cheese Casserole

1 lb. Ground Beef
1 med. Onion, chopped  (optional)
4 to 6 servings Insant Mashed Potatoes (or real ones if you like)
I can Cheddar Cheese Soup

Brown ground beef and onion in skillet, seasoning to taste.  Drain well.  While beef is
cooking, prepare mashed potatoes according to package directions.  

Place beef in the bottom of an oven casserole dish. Spread mashed potatoes evenly on
top of beef.  Spread cheddar cheese soup evenly on top of potatoes.  

Cover casserole and store in refrigerator until next day, or....

Oven to 350.  Cover and bake for about 30 minutes or until heated thru and cheese is
melty (but not brown).
