Subj: 3 Fish Casserole
1 lb lobster or 1 lb langostinos or 1 lb shrimp
1 lrg can of crab meat or 1 pkg of frozen King crab
1 lb Scallops (if large, quarter)
1 pkg Uncle Ben's long grain rice.
4 tbsp butter
4 tbsp flour
1 cup cream
2 cups milk
Curry powder or sherry
Prepare rice according to directions on package.
Make a roux with 4tbsp of butter and flour. Add 1 cup of cream and 2 cups of milk for
the white sauce.
Add seafood to the rice and season with 1/4 - 1/2 tsp of Curry or 1/2 cup of sherry. Put
in a buttered casserole and top with buttered bread crumbs and grated cheese.
Bake at 350 F for about 30 min. Makes a large casserole.
Serve with a salad, fresh bread and a nice wine.
