Steve Pickford's Zucchini Casserole

3 cups diced or thinly sliced zucchini (summer squash may be added for color)
1/2 cup chopped onions
1/2 cup Parmesan cheese
1/2 cup vegetable oil
1 cup Bisquick
2 tbsp. parsley flakes
1/2 tbsp. salt
1/2 tbsp. dried oregano
1/2 tbsp. minced fresh garlic
black pepper to taste
Mix all ingredients well. Place in a greased pan. Bake at 350 degrees Fahrenheit for 30
minutes or until well browned on top.
