Calvados Chicken

6 chicken cutlets (or 3 boneless skinless chicken breasts divided in two)
1 onion sliced
1 cup apple juice
3 tbsp. Calvados apple brandy (or 3 tbsp. more apple juice)
3 unpared Golden Delicious apples, cored and sliced
1/4 teaspoons ground cinnamon
minced parsley

Spray a large non-stick skillet with cooking spray. Brown chicken cutlets on both sides.
Remove from skillet and set aside. Stir in sliced onion and then Calvados, Cook 3
minutes. Spread apple slices in skillet. Arrange chicken pieces on top. Simmer
uncovered until apple slices and chicken are cooked through. Sprinkle with cinnamon
and garnish with parsley before serving.
