Madeline's Chicken and Dumplings
4 lbs. chicken, cut into serving pieces
2 small carrots, sliced
3 sweet potatoes cut up
3 Irish potatoes cut up
whole small onions.
Put chicken in a large pot. Add salt and pepper, a dash
of cayenne, a bay leaf and a
handful of celery tops. Cover with water and cook until
done. Discard bay leaf, add
vegetables and continue cooking until vegetables are
2 C flour
1/2 tsp. salt
1 tsp. baking powder
4 tbsp. rendered chicken fat
enough water to mix for rolling.
Divide dough into three parts. Roll two parts, cut into
squares. Add 1 part to simmer
chicken and cook 5 minutes. Add second part and cook
5 minutes more. The third part
can be added as another tier of dumplings or used as
a top crust.
