              Tomato Beef Fried Rice
              
  Like chow mein, fried rice is a whole genre of cooking, a versatile technique that can be
adapted to most stir-fried dishes. A wok is traditional, but I find a non-stick pan works
even better, and is easier to clean.
   Makes: 4 to 6 servings                       
   
Sauce
3 tbl ketchup
2 tbl soy sauce
2 tsp sesame oil
1/2 tsp salt

2 tbl veg. oil
1/2 lb ground beef
1 small onion, chopped
2 green onions(including tops), thinly sliced
4 cups cooked long grain rice
1 medium tomato, peeled, seeded, and chopped
1/2 cup frozen peas, thawed
2 eggs, lightly beaten

    Preparation
Combine sauce ingredients in a small bowl and set aside.
 
    Cooking
Place wok over high heat until hot. Add oil, swirling to coat surface. Add beef and
stir-fry for 1 minute. Add onion and green onion and stir- fry for 2 minutes. Reduce
heat to medium and stir in rice, separating grains with the back of a spoon.Add tomato,
peas, and eggs and cook, stirring constantly, for 1 minute. Add sauce and cook, stirring,
until heated through.
