Best Crab Cakes
1 lb. red or blue crab
1/4 tsp. salt
1 tsp. Old Bay seasoning
2 tsp. prepared mustard
1 heaping tbsp. mayonnaise
1 tbsp. Worcestershire sauce
1 tbsp. chopped parsley
1 egg beaten
1/2 C cracker meal (Ritz crushed crackers good sub.)
1/4 C (1/2 stick) BUTTER (no margarine)
oil for frying
Lightly blend crab, seasonings, mayo, Worcestershire 
sauce, mustard, parsley, egg and
cracker meal.
Form into cakes. Heat thin layer of oil in a heavy pan. 
Add butter over moderate heat.
Cook cakes about 5 minutes on each side until golden 
brown. Blot on paper towels and
serve immediately.
