Subj:  The Gunning's Crab Cake

Crab Cakes - Gunning's
5  cups finest quality lump crabmeat
1/2 tspn salt
1 Tbsn freshly ground pepper
1 Tbsn Old Bay Seasoning
5 eggs
5 Tbsn mayonnaise
6 Tbsn Dijon Mustard
1 1/2 cups crushed saltine crackers
Worcestershire sauce
1  Set oven to broil.
2  Spread crabmeat evenly in large pan.
3  Distribute salt, pepper, old bay and crackers over 
the crabmeat.
4  Add eggs, mayonnaise and mustard to crabmeat.  Spritz 
gently w/ worcestershire
sauce.
5  Mix thoroughly but lightly by hand.
6  Gently form into sixteen cakes.
7  Broil four to five incehs from flame until golden 
brown.  (about 3 minutes)
Serves 8
