Fried Onion Soup
4 cups onions, thinly sliced
1/4 cup unsalted butter
1 cup boiling water
4 cups plus 2 tbsp. milk
salt and pepper to taste
1/4 tsp. cayenne pepper
1/4 C dry white wine
2 tbsp. flour
grated mozzarella cheese
4 slices toast
In a heavy saucepan, saute the onions in butter over 
moderate heat until tender but not
browned. Add boiling water and reduce heat. Simmer for 
ten minutes, scraping bottom
of pan.  Stir in 4 cups milk and wine. Season to taste. 
Blend remaining 2 tbsp. milk into
reserved 2 tbsp. milk until smooth. Stir into onion 
mixutre, Continue cooking  and
stirring until soup is slightly thickened and bubbly 
hot.  Place a slice of toast in each of
four soup bowls, and sprinkle generously with mozzarella 
cheese. Laddle hot soup into
each bowl and serve immediately.
Serves 4
