White Mushroom Sauce

This can be served over spaghetti or whole grains.

3 cups nut milk or rice milk
1 cup water
1 onion, chopped
1 lb fresh mushrooms, sliced
1/2 tsp tarragon
1/4 tsp dill weed
1/4 tsp thyme
1/4 cup sherry
3 Tbsp cornstarch or arrowroot

Sauté onion in 1/4 cup  water for 5 minutes.  Add remianing
ingredients, except for cornstarch or arrowroot.  Bring to a boil
over low heat, stirring often.  Mix cornstarch or arrowroot in 1/3
cup water.  Add to white sauce.  Continue  to cook and stir until
thickened.

Preparation and cooking time:  20 min.
